A steaming cup of your favorite beverage, a good book, and a delicious gluten free chocolate donut just waiting to be enjoyed. These are the times that make food preparation so well worth the wait (and work!).
Donuts have that reputation of being unhealthy, tough to make and not very tasty unless they are from a donut palace. But these donuts are about to throw all those assumptions out the window.
Light, airy and loaded with chocolatey goodness, these gluten free delights are the perfect compliment to any breakfast or brunch. The rich chocolate glaze adds the finishing touch that makes these donuts a melt-in-your-mouth delight.
This recipe does not make very many, so you may want to go ahead and double it. And even if you don’t have that many people you plan on sharing these with, they freeze very well. Just leave off the glaze before wrapping well and sticking in the freezer.
Gluten free Chocolate Donuts with Rich Chocolate Glaze
Ingredients:
1/2 cup + 1 Tbsp GF oat flour
1/2 cup + 2 Tbsp sweet rice flour
1/2 cup granulated sugar
1/4 cup unsweetened cocoa powder
1/2 tsp salt
1 tsp baking powder
Dash of cinnamon
2 large eggs
3 Tbsp unsweetened apple sauce
1/2 cup + 3T milk
3 Tbsp vegetable oil
2 tsp vanilla
Rich Chocolate Glaze:
1/2 cup powdered sugar
1 Tbsp unsweetened cocoa powder
1 Tbsp milk
1/2 teaspoon vanilla
sprinkles or nuts or other fun topping
Directions:
Preheat your oven to 350°F. Grease a donut pan well and set aside.
In a medium sized bowl, combine the oat flour, sweet rice flour, sugar, cocoa powder, salt, baking powder and cinnamon.
In a small bowl, whisk together eggs, applesauce, milk, oil and vanilla.
Add the wet ingredients to dry ingredients and stir just until combined. Mixture may be a bit lumpy & that’s ok. Do not overmix.
Using a small spoon or spatula, fill the donut pan.
Bake in your preheated oven for 20-25 minutes. The donuts are done when testing with a toothpick reveals a slightly moist toothpick.
Let them cool in the pan, on a wire rack for 5 minutes, then turn out onto a cooling rack to cool completely.
To make the glaze, combine everything but the sprinkles and whisk gently until smooth. When the donuts have cooled, turn each one upside down and dunk in the icing. Sprinkle the tops with sprinkles or nuts and let the glaze set.
Now break it apart, take a big bite and enjoy!
