Gluten Free Apple Bread {Dairy Free}

Instructions
In a small measuring cup, heat ¼ cup of milk to 100 F. Mix in the yeast and set aside to proof.
In the bowl of a stand mixer, add gluten free flour mix, psyllium husk powder, salt and sugar. Mix together for 30 seconds.
Add in the yeast mixture, coconut oil and remaining milk. Mix on medium speed for 2 minutes.
Cover the bowl and let the dough rest for 10 minutes.
Meanwhile, prepare 9” x 5” baking pan by spraying lightly with cooking spray.
In a medium bowl, mix softened butter, diced apples, brown sugar and cinnamon together. Mixture will be thick.
In the prepared pan, spread 1 cup of bread dough into the bottom of the pan.
On top the batter, evenly sprinkle half the diced apples mixture.
Top with another cup of batter and spread evenly.
Sprinkle with the rest of the apple mixture.
Top with the rest of the batter and spread to cover the top of the apples.
Cover the pan with a light towel and let rise for 30 minutes.
Preheat oven to 375 F. Bake the risen bread for 45 minutes.
Remove from the oven and allow it to cool in the pan for 15 minutes.
Carefully turn the bread out of the pan to finish cooling on a wire rack.
Slice and serve warm.
Notes
Ingredients should be at room temperature.
Dice apples into ¼ inch chunks.
Spread batter to cover the bottom of the pan, then top with half the apples. Repeat the process, finishing with the batter.
Bread is best served the same day.
