Use a vegetable peeler to peel the outer layer off the carrots.
Slice carrots into ½ inch slices.
Place slices into a food processor. Pulse for 3-5 seconds until carrots are fully grated.
Vegetable peeler method:
Use a vegetable peeler to peel the out layer off the carrots and discard.
Working with half of the carrot at a time, use the vegetable peeler to shred each carrot. Shred the lower half of the carrot first, then move to the upper portion of the carrot.
Notes
These are full size carrots, if using baby carrots, do not peel.The food processor method will require just a few seconds on pulse.The vegetable peeler method takes about 7-10 minutes for 1 pound of carrots.
