Soft, chewy peanut butter cookies made from scratch with simple ingredients!

Ingredients
1 ½cupflour(180g)
½tspbaking soda
¼tspsalt
½cupgranulated sugar(100g)
½cupbrown sugar, packed(100g)
½cupbutter,room temperature (113g)
¾cupcreamy peanut butter(185g)
1tspvanilla extract
1largeegg,room temperature
Instructions
In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
In a large bowl, add the room temperature butter and beat on medium-high for about 30 seconds, until smooth.
Add both sugars and continue mixing on medium-high speed for about 2-3 minutes, until the mixture is light and fluffy.
Add the vanilla extract and egg and mix well.
Add the peanut butter and mix to incorporate.
Add the dry ingredients and mix on low speed, just until combined.
Wrap the cookie dough and chill it in the refrigerator for 1 hour.
Preheat the oven to 350℉. Line baking trays with parchment paper.
Roll the cookie dough into even balls, about 2 tbsp each (1 oz). Place them on the baking tray, spaced about 2 inches apart. Gently flatten each cookie by using a fork to make a crisscross pattern on each.Tip: Roll the cookies in sugar before baking for an extra crunch and shine!
Bake for about 8-10 minutes, just until the edges start to turn golden.
Allow the cookies to cool on the baking tray at least 5-10 minutes before removing them.
Notes
Bake these cookies just until the edges look set and are lightly golden. The centers will still look soft, but they will continue baking on the hot baking sheet after you pull them out of the oven.
Dip the fork in flour each time you make the crisscross pattern on the tops to avoid it sticking to the cookies.
For smaller cookies, roll the dough into 1 tbsp balls each and bake closer to 8 minutes.
