Ingredients
300gramsgluten free flour mixabout 2 ¼ cups
50gramsgranulated sugarabout ¼ cup
3teaspoonsrapid rise yeastalso called instant yeast
¼teaspoonbaking powder
½teaspoonxanthan gum
½teaspoonsalt
½cupalmond milkwarmed to 100 F
2Tablespoonscoconut oilmelted
2teaspoonsvanilla extract
1largeegg
Instructions
Spray the basket or wire racks of an air fryer with cooking spray. Set aside.
In a large bowl or bowl of a stand mixer, whisk together the gluten-free flour mix, sugar, yeast, baking powder, xanthan gum, and salt.
In a small bowl or measuring cup, add the milk, coconut oil, vanilla extract, and egg. Mix for 30 seconds on low speed.
Scrape down the sides of the bowl, turn the speed to medium, and continue to mix the dough for 3 minutes.
Place dough on a piece of floured parchment paper. Roll to a 7-8 inch disk, with dough about ½ inch - ¾ inch thick.
Using a 2 inch biscuit cutter, cut out as many rounds as possible. Repeat with remaining dough.
Take each round and use your fingers to make a hole in the middle of each.
Place doughnuts on the wire rack or in the air fryer basket and let rise for 30-35 minutes.
Preheat air fryer to 350 F. Cook doughnuts for 10-15 minutes or until golden brown.
Let doughnuts cool slightly then glaze with chocolate glaze or top with cinnamon sugar topping.

This recipe was created with this gluten free flour mix. Other mixes may work but they can make the donuts more dry.
Rapid rise yeast is also called instant yeast or bread machine yeast. It does not need to be proofed.
Xanthan gum has been added to the recipe to improve the texture.
The almond milk may be substituted with oat milk, soy milk, or coconut milk.
The coconut oil may be substituted with melted vegan butter.
The dough should come together and be slightly sticky. A floured piece of parchment paper will help with both rolling out the dough and to prevent each donut from sticking.
Roll the dough with just a few swipes otherwise the donuts may be flat.
This recipe was tested with a wire rack style air fryer. Place as many donuts as will comfortably fit in your air fryer basket.
