Gluten Free Apple Bread {Dairy Free}

This amazing gluten free apple bread has Fall written all over it. Sweet apples, brown sugar and cinnamon combines to create the most delicious flavored bread ever.

Every ingredient in this bread contributes to it tasting amazing, but the apples take center stage. If you don’t keep Granny Smith apples around, you can use other varieties, but I highly recommend Granny Smiths. They just seem to have the perfect combination of flavor and texture. In other words, they don’t get mushy when they’re cooked. They hold their shape so you can actually take a bite of bread and the apple has a bit of texture.

What kind of flour mix is best?

My recipes here on Zest For Baking use my homemade gluten free flour blend. I highly recommend this combination of rice flours and starches. I haven’t tried any other flour in it, but that one has been tested and produces excellent results.

There’s no xanthan gum, is that correct?

Yes! No xanthan gum needed! This recipe uses a bit of psyllium husk powder as the binder. I’ve found that it doesn’t need the typical amount either. Just 2 teaspoons seems to produce a nicely textured loaf.

Here are a few more tips to making this mouthwatering gluten free apple bread:

Bring ingredients to room temperature

Everything but the milk should be at room temperature (milk should be slightly warmer).

 

 

Make sure your yeast is active

This is very important to the success of any bread, like in these gluten free rolls and this bread, so it’s worth mentioning for this bread too. The yeast should get nice and foamy while it’s proofing. It should smell like bread. Well, yeast, but it should smell like bread in the works. If it doesn’t get foamy, then toss the mixture out and start again. Chances are, the milk temperature was too hot or too cool.

And the good news is, the prep for them is not difficult at all. A good vegetable peeler and sharp knife is all you need.

But you do want small diced apples. Aim for about ¼ of an inch size pieces. Then just mix them with the softened butter, brown sugar and cinnamon. It’ll be a thick cinnamon mixture.

To get that beautiful layered look, each portion of dough is spread in the pan.

You’ll have 3 layers of batter sandwiched with 2 layers of diced apples.

Here’s the pattern to follow:

  • 1 cup of bread batter
  • Half the diced apples
  • 1 cup of bread batter
  • Remaining diced apples
  • Remaining bread batter

Baking

The aroma of this bread baking will fill every nook and cranny with the heavenly scent of baked apples. So when it’s done baking, you’ll want to dig right in. Fortunately with this bread, you can!

The easiest way to do it, is to let it cool slightly in the pan on a wire rack. Then remove it from the pan and slice it into thick slices.

And by then you’ll have a waiting crowd, so dig right in to this gluten free apple bread!

Gluten Free Apple Bread {Dairy Free}

A delicious gluten free apple bread with the sweetness of cinnamon and brown sugar.

Ingredients
  

  • 1 ¼ cups almond milk divided, warmed
  • 2 ¼ teaspoons rapid rise yeast
  • 460 grams gluten free flour mix about 3 ½ cups
  • 2 teaspoons psyllium husk powder
  • ½ teaspoon salt
  • ¾ cup sugar
  • 2 Tbsp. melted coconut oil
Filling
  • 3 Tablespoons non dairy butter softened, divided
  • 2 small granny smith apples peeled, diced
  • cup brown sugar
  • 2 ½ teaspoons ground cinnamon

Method
 

  1. In a small measuring cup, heat ¼ cup of milk to 100 F. Mix in the yeast and set aside to proof.

  2. In the bowl of a stand mixer, add gluten free flour mix, psyllium husk powder, salt and sugar. Mix together for 30 seconds.

  3. Add in the yeast mixture, coconut oil and remaining milk. Mix on medium speed for 2 minutes.

  4. Cover the bowl and let the dough rest for 10 minutes.

  5. Meanwhile, prepare 9” x 5” baking pan by spraying lightly with cooking spray.

  6. In a medium bowl, mix softened butter, diced apples, brown sugar and cinnamon together. Mixture will be thick.

  7. In the prepared pan, spread 1 cup of bread dough into the bottom of the pan.

  8. On top the batter, evenly sprinkle half the diced apples mixture.

  9. Top with another cup of batter and spread evenly.

  10. Sprinkle with the rest of the apple mixture.

  11. Top with the rest of the batter and spread to cover the top of the apples.

  12. Cover the pan with a light towel and let rise for 30 minutes.

  13. Preheat oven to 375 F. Bake the risen bread for 45 minutes.

  14. Remove from the oven and allow it to cool in the pan for 15 minutes.

  15. Carefully turn the bread out of the pan to finish cooling on a wire rack.

  16. Slice and serve warm.

Notes

  • Ingredients should be at room temperature.
  • Dice apples into ¼ inch chunks. 
  • Spread batter to cover the bottom of the pan, then top with half the apples. Repeat the process, finishing with the batter.
  • Bread is best served the same day.

      I have not made this bread as dairy free. However, full fat coconut milk is often a good sub for milk and then there is dairy free butter you can try.I just haven't made it as a dairy free version, so no guarantees!
